I love Pearl Crescent. It captures full scrolling screens in OS X and you can add it to your toolbar, then select whether you want to capture all or the visible portion of the screen. The only bummer is that it can't capture some flash embeds. There may be equal or better programs out there, but this one's never let me down.
I use FastStone which used to be free but is now around $19 ro a lifetime licence and worth every penny. You can capture video, screen, selected area and frame, watermark, fade edge, ragged edge and loads more and it is so simple.
